At Evo Hotel, breakfast is POWER, a true force of nature: slow-paced, delicious and 100% locally-grown. We also serve only local ingredients at the Mad Bar.
Our philosophy? A few simple things, all made properly by us.
Power Breakfast
We serve it from 7:30 AM to 11 AM – proof that we like to take our time around here. But what we do, we do well!
We make everything ourselves, even the bread, with our own flour, the cakes, tarts and mini pizzas. We source home-baked croissants and organic jams from trusted suppliers. Oh, and of course, our cold cuts, yoghurt and seasonal fruit await you every morning.
Evo’s advice: don’t be “mad”, your diet can wait!
Mad Bar
Mini pizzas, small pastries, Umbrian crescia flatbread, locally-produced cheese and cured meat platters, tartare and bruschetta, accompanied by local wines and our explosive cocktails.
At the Mad Bar it’s all about simple, authentic, down-to-earth foods we make ourselves using ingredients that truly make a difference. For a mouth-watering break (an AperitEvo!), to enjoy wherever you want, even by the pool. Open every day from noon until 8 PM.

Ultra-short supply chain
Did you know that many of the products you taste here at Evo Hotel we make ourselves? Our flour, extra virgin olive oil, wine and even our cured meats are practically “yard-to-table”!
When our own supply runs out, we still manage to maintain our high quality by purchasing our ingredients solely from a handful of highly trustworthy local suppliers.
